So Thursday nights dinner: Chicken and Stuffing
*as I was making this, I was reading the back of the stuffing box and it is totally on there.
But this was a meal Jerret used to make when we were dating and living in college. So this gives you an idea of how easy it is :)
If you ever have read my "What's on the menu?" before, you know I do not measure, so you will have to make your own judgements OR look on the back of a stuffing box :)
Cut and cook up some chicken
*I do this so it doesn't have to be in the oven as long
Mix 2 cans cream of chicken soup and about 1/2 container of sour cream (or 2 large tablespoon dollops), shredded cheese, veggies (if you like...this time I only had peas and broccoli so that is what went in) and salt/pepper to taste
Make stuffing (I did 2 boxes so there is more stuffing)
Once chicken is cooked, mix chicken w/ soup mixture, spray 9x13 pan w/ nonstick spray, pour chicken mixture into pan, cover w/ stuffing and cook in oven for about 20 minutes on 400 degrees and then enjoy!!!

I just use stove top chicken flavor...nothing special...and SUPER healthy :) he he.
I've been making soup the past couple nights! Tonight I did a chicken tortellini! Chicken broth, chopped celery, chopped carrots, shredded chicken and a can of corn. After carrots were almost cooked I added a package of frozen tortellini! Cooked until tortellini was done and then enjoyed! I made enough and froze a container for later on down the road. Delish! :)
I also made yummy pork ribs tonight. I was busy in the kitchen trying to cook a couple meals that way I don't have to cook for a couple nights! I cooked 4-5 huge pork ribs on a low boil/simmer for a little over an hour. Pulled the fat off each of the ribs and with the meat I mixed bbq sauce with them then placed on a cookie sheet. I then broiled the bbq'd meat until heated. Served with mashed potatoes and steamed broccoli! :)
Those both sound delicious Anna. I did BBQ pulled pork in the crock pot last week which turned out delicious too! I was doing really good at buying for the week or 2 weeks even but now I am not doing so great at making dinner what so ever...WHOOPS!
