Tonight we had chicken/veggie chow-mein. I used stuff I had in the freezer...chicken tenders (frozen from Costco...our 1 staple we buy at Costco cause it helps with lots of dinners), frozen corn, frozen french style green beans, frozen broccoli. I usually buy my veggies frozen cause I am not a huge fan of canned (besides corn). I buy fresh when I know I will be using it right away, but when I am doing major grocery shopping I usually buy frozen cause I know I can stick it in the freezer and it will be there until I need it! (like tonight...)
I cooked sticky rice to go with it (another staple we always have in the cupboard cause we do a lot of stir fry type meals around this house)
I cooked up the chicken w/ a little olive oil, crushed fresh garlic and a splash of soy sauce, added veggies, then when it was all cooked added the "Chow Mein" seasoning (from a packet mixed w/ water). It was SUPER yummy & SUPER easy and Brynn even ate it (didn't pick out the veggies either) WHOO HOO! This is major this week because since Halloween she has been ALL about the candy!!

I don't know why I never thought about buy vegetables frozen! I really don't like stuff out of a can, so I hardly buy it, and then my fresh produce goes bad. I buy corn frozen, not sure why I don't buy other veggies! Thanks for the tip! :)
I know they say it is not as healthy, but it is so useful especially when we don't go through fresh veggies that fast! They are not loaded with sodium as canned either which is good! :)
